I want to thank my mom for teaching me how to make her delicious pineapple upside down cake! This has been my favorite cake to make since my mom first made it back in the early 90's. The flavor of the caramelized brown sugar coupled with the sweet tanginess of the pineapple is just fantastic. I have included the recipe below for anybody that wants to replicate the recipe. I want to note that for 2 cakes, you should use the following ratios -
2 cans of original brand dole pineapple
2.5 cups of flour
4 eggs
